8 slices of Gallagher’s Wholegrain pan bread
225g fresh mozzarella cheese – sliced
2 medium tomatoes – sliced thickly
1 tablespoon of olive oil
Pinch of salt and pepper
4 torn basil leaves
Place 2 cheese slices on each of 4 bread slices.
Top evenly with tomatoes.
Drizzle tomatoes with oil, sprinkle with salt and pepper.
Top evenly with basil and remaining bread slices.
Serve.
